Ukwaju (Tamarind Juice)

Ingredients
- •250g fresh tamarind pods (or pulp)
- •1 litre hot water
- •1/2 cup sugar (adjust to taste)
- •1/4 teaspoon cardamom powder (optional)
- •Fresh mint leaves for garnish
- •Ice cubes

Peel the fresh tamarind pods and remove the stringy veins, leaving the sticky brown pulp and seeds.

Place the tamarind pulp in a large bowl and pour hot water over it. Let it soak for 30 minutes until softened.

Use your clean hands or a spoon to mash the softened tamarind in the water, separating the pulp from the seeds.

Pass the mixture through a fine sieve into a pitcher, pressing the pulp to extract all the thick juice. Discard the seeds and fibres left in the sieve.

Add sugar and whisk until completely dissolved. For a spiced twist, stir in cardamom powder.

Taste and add more water or sugar if it is too concentrated or sour.

Chill in the refrigerator. Pour over ice cubes and garnish with fresh mint before serving.
Chef Tips
- •Ukwaju is naturally very tart, so don't be afraid to add plenty of sugar or honey.
- •You can add a tiny pinch of salt or a squeeze of lime to enhance the complex flavours.
- •This juice pairs incredibly well with spicy coastal dishes or viazi karai.
