Kenyan Chai (Spiced Milk Tea)

Ingredients

Servings
4
  • 2 cups water
  • 2 cups whole milk
  • 4 teaspoons loose black tea (or 4 tea bags)
  • 4 tablespoons sugar (adjust to taste)
  • 4 cardamom pods, crushed
  • 1 small piece ginger, crushed
  • 1 cinnamon stick

Instructions

  1. 1

Add water, crushed cardamom, ginger, and cinnamon to a pot.

  2. 2

Bring to a boil and let simmer for 2 minutes to infuse the spices.

  3. 3

Add tea leaves and sugar. Stir and simmer for another 2 minutes.

  4. 4

Pour in the milk and bring to a boil, watching carefully to prevent overflow.

  5. 5

Reduce heat and let simmer for 3-4 minutes until the chai turns a rich brown color.

  6. 6

Strain into cups and serve hot.

Chef Tips

  • Kenyan chai is traditionally quite sweet - adjust sugar to your preference.
  • The longer you simmer with milk, the creamier and richer it becomes.
  • For extra richness, use full-fat milk.
