Ingredients
- •2 kg goat meat or beef ribs
- •1 tablespoon salt
- •1 tablespoon black pepper
- •4 cloves garlic, crushed
- •2 tablespoons vegetable oil
- •Juice of 2 lemons
- •Fresh rosemary sprigs
Instructions
- 1
Clean the meat thoroughly and pat dry with paper towels.
- 2
Mix salt, pepper, crushed garlic, oil, and lemon juice to make a marinade.
- 3
Rub the marinade all over the meat, ensuring it gets into all crevices.
- 4
Let marinate for at least 2 hours, preferably overnight in the refrigerator.
- 5
Prepare your charcoal grill - the coals should be white-hot but not flaming.
- 6
Place meat on the grill, not too close to the coals to avoid burning.
- 7
Grill slowly, turning occasionally, for about 45 minutes until cooked through.
- 8
Let rest for 10 minutes before cutting into pieces. Serve with kachumbari and ugali.
Chef Tips
- •Goat meat is traditional, but beef works well too.
- •Low and slow is the secret - rushing will make the meat tough.
- •The meat should have a slight char on the outside but be juicy inside.
