  • 2 kg goat meat or beef ribs
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 4 cloves garlic, crushed
  • 2 tablespoons vegetable oil
  • Juice of 2 lemons
  • Fresh rosemary sprigs

Instructions

    Clean the meat thoroughly and pat dry with paper towels.

    Mix salt, pepper, crushed garlic, oil, and lemon juice to make a marinade.

    Rub the marinade all over the meat, ensuring it gets into all crevices.

    Let marinate for at least 2 hours, preferably overnight in the refrigerator.

    Prepare your charcoal grill - the coals should be white-hot but not flaming.

    Place meat on the grill, not too close to the coals to avoid burning.

    Grill slowly, turning occasionally, for about 45 minutes until cooked through.

    Let rest for 10 minutes before cutting into pieces. Serve with kachumbari and ugali.

  • Goat meat is traditional, but beef works well too.
  • Low and slow is the secret - rushing will make the meat tough.
  • The meat should have a slight char on the outside but be juicy inside.
