Ingredients

Servings
4
  • 2 whole tilapia, cleaned and scored
  • Juice of 2 lemons
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. 1

Clean the fish and make diagonal cuts on both sides to help the marinade penetrate.

  2. 2

Mix lemon juice, turmeric, cumin, paprika, garlic, salt, and pepper together.

  3. 3

Rub the marinade all over the fish, inside the cuts and in the cavity.

  4. 4

Marinate for at least 15 minutes.

  5. 5

Heat oil in a large frying pan over medium-high heat.

  6. 6

Fry fish for 6-8 minutes per side until golden brown and crispy.

  7. 7

Serve hot with kachumbari, ugali, and lemon wedges.

Chef Tips

  • Scoring the fish deeply helps the marinade penetrate and ensures even cooking.
  • Make sure the oil is hot before adding the fish to get a crispy skin.
  • Tilapia from Lake Victoria is the most traditional choice.
