Ingredients

Servings
6
  • 4 large potatoes, peeled and cubed
  • 1 cup green peas
  • 1 cup sweet corn kernels
  • 1 cup pumpkin leaves or spinach, chopped
  • 1 onion, diced
  • 2 tablespoons butter
  • Salt to taste
  • Water for boiling

Instructions

  1. 1

Boil potatoes in salted water until soft, about 15 minutes.

  2. 2

Add peas, corn, and greens to the pot in the last 5 minutes of cooking.

  3. 3

Drain most of the water, leaving a little at the bottom for mashing.

  4. 4

Add butter and diced onion to the pot.

  5. 5

Mash everything together until well combined but still with some texture.

  6. 6

Season with salt and mix until smooth.

  7. 7

Serve hot as a main dish or as a side alongside nyama choma.

Chef Tips

  • Don't over-mash — mukimo should retain some texture from the peas and corn.
  • Traditionally served at celebrations and public holidays alongside nyama choma.
  • Pumpkin leaves give the most authentic flavour but spinach works great too.
