Mukimo

Ingredients
- •4 large potatoes, peeled and cubed
- •1 cup green peas
- •1 cup sweet corn kernels
- •1 cup pumpkin leaves or spinach, chopped
- •1 onion, diced
- •2 tablespoons butter
- •Salt to taste
- •Water for boiling
Instructions

Boil potatoes in salted water until soft, about 15 minutes.

Add peas, corn, and greens to the pot in the last 5 minutes of cooking.

Drain most of the water, leaving a little at the bottom for mashing.

Add butter and diced onion to the pot.

Mash everything together until well combined but still with some texture.

Season with salt and mix until smooth.

Serve hot as a main dish or as a side alongside nyama choma.
Chef Tips
- •Don't over-mash — mukimo should retain some texture from the peas and corn.
- •Traditionally served at celebrations and public holidays alongside nyama choma.
- •Pumpkin leaves give the most authentic flavour but spinach works great too.
