  • 2 cups dried maize (corn)
  • 1 cup dried beans (kidney or pinto)
  • 2 potatoes, cubed
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 tablespoons cooking oil
  • Salt to taste
  • Fresh coriander for garnish

Instructions

    Soak maize and beans separately overnight.

    Boil maize in a large pot until almost tender (about 1.5 hours).

    Add beans and continue cooking until both are soft.

    In a separate pan, sauté onions until golden. Add tomatoes and cook until soft.

    Add the onion-tomato mixture to the pot with maize and beans.

    Add potatoes and carrots. Season with salt.
