Ingredients
- •3 cups all-purpose flour
- •1/2 cup sugar
- •1 teaspoon cardamom powder
- •1 teaspoon instant yeast
- •1/2 cup coconut milk
- •1/2 cup warm water
- •2 tablespoons butter, melted
- •1 egg
- •Oil for deep frying
Instructions

Mix flour, sugar, cardamom, and yeast in a large bowl.

In a separate bowl, whisk together coconut milk, warm water, melted butter, and egg.

Pour wet ingredients into dry ingredients and mix to form a soft dough.

Knead for 5 minutes until smooth. Cover and let rise for 1 hour.

Roll out dough to 1/2 inch thickness. Cut into triangles or squares.

Heat oil to 350°F (175°C). Fry mandazi in batches until golden brown on both sides.

Chef Tips
- •Don't make the oil too hot or the outside will burn before the inside cooks.
